More About Chocolate Truffle Cake: The chocolate truffle was invented in the 1920s in the kitchen of French chef Georges Auguste Escoffier. One of his apprentices spilled hot cream into a bowl of pricey chopped chocolate while attempting to prepare a pastry cream.

When Escoffier took the bowl and began stirring the chocolate and cream mixture, he noticed that it began to form an emulsion, resulting in a sauce that he could coat things in and create dishes like pear belle helene, or pour into a baked pastry case for tart au chocolat, or use as a sauce or glaze, when cooled and hardened, he discovered that he could work the chocolate paste with his hands to form a bumpy, walnut sienna. And thats how Truffle got its origination.
