More About Chocolate Delight Cake: Chocolate cake dates from the 17th century, when conventional cake recipes were supplemented with cocoa powder from the Americas. In 1828, the Dutchman Coenraad van Houten invented a mechanical extraction method for removing the fat from cacao liquor, yielding cacao butter and partially defatted cacao, a compacted mass of solids that could be marketed as "rock cacao" or powdered into powder. As a result of the processes, chocolate has gone from a high-end treat to a low-cost everyday food. Rodolphe Lindt invented conching, a procedure for generating silkier, smoother chocolate, in 1879, making it easier to bake with chocolate since it blends smoothly and fully with cake mixtures. Chocolate recipes were largely for chocolate drinks until 1890 to 1900, and it was only used in fillings and glazes in cakes. American cooks began adding chocolate to cake batter in 1886, resulting in the first chocolate cakes in the United States.
